Dough
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar, plus extra for dusting
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/4 cup raspberry jam
Garnish

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream softened butter and granulated sugar until fluffy.
  3. Add powdered sugar, vanilla, almond extract, and salt; mix well.
  4. Gradually mix in flour to form a soft dough, then roll out to 1/4-inch thickness.
  5. Cut out cookies, bake 10-12 minutes, then cool. Spread jam on solid cookies, top with cutouts, dust with powdered sugar.
