Ingredients
  

Dry ingredients
  • 1 cup almond flour
  • 1.5 cups powdered sugar
Wet ingredients
  • 3 large egg whites
  • 0.25 cup granulated sugar
  • 0.25 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
Food coloring
  • as needed red and white food coloring
Filling and decorations
  • for filling buttercream frosting
  • for eyes mini chocolate chips

Method
 

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment.
  2. Mix sifted almond flour and powdered sugar; beat egg whites with cream of tartar until foamy, then add sugar and beat to stiff peaks.
  3. Fold dry mixture into egg whites in three parts; divide batter, tint one with red, pipe small circles for Santa's hats and faces.
  4. Let macarons sit 30-60 mins, then bake 15-18 mins; cool before filling and decorating with frosting and chocolate chips.

Notes

Ensure macarons sit long enough to develop a skin for better baking results.
