- Heat olive oil in a skillet over medium heat. Cook sausage until browned, about 6-8 minutes. Remove and set aside.
- In the same skillet, sauté onion, bell pepper, and garlic for 2-3 minutes until softened.
- Add rice to the skillet, stirring to coat in the sausage and vegetable mixture.
- Pour in chicken broth and add paprika, thyme, salt, and pepper. Stir to combine.
- Simmer, cover, and reduce heat to low. Cook for 15-20 minutes or until rice is tender and liquid is absorbed.
- Stir in frozen peas, if using, and cook for an additional 3-5 minutes.
- Garnish with fresh parsley before serving.
Notes
For a spicier dish, use hot Italian sausage. You can also add other vegetables like diced carrots or celery.
