  • 1 lb beef sausage Italian beef sausage or your preferred variety
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 0.5 cup frozen peas optional
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat. Cook sausage until browned, about 6-8 minutes. Remove and set aside.
  2. In the same skillet, sauté onion, bell pepper, and garlic for 2-3 minutes until softened.
  3. Add rice to the skillet, stirring to coat in the sausage and vegetable mixture.
  4. Pour in chicken broth and add paprika, thyme, salt, and pepper. Stir to combine.
  5. Simmer, cover, and reduce heat to low. Cook for 15-20 minutes or until rice is tender and liquid is absorbed.
  6. Stir in frozen peas, if using, and cook for an additional 3-5 minutes.
  7. Garnish with fresh parsley before serving.

Notes

For a spicier dish, use hot Italian sausage. You can also add other vegetables like diced carrots or celery.
