Method
- Heat olive oil in a skillet over medium-high heat.
- Pat scallops dry, season with salt, pepper, paprika, and cayenne.
- Add scallops to hot skillet; sear 2-3 minutes per side until golden. Remove and set aside.
- In same skillet, simmer heavy cream, Cajun seasoning, and lemon juice for 3-5 minutes.
- Return scallops to skillet, coat with sauce, cook 1 minute. Garnish with parsley.
Notes
Ensure scallops are dry before searing for the best crust.
