Ingredients
  

Seafood
  • 1 pound large sea scallops
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon lemon juice
  • Chopped parsley for garnish parsley for garnish

Method
 

  1. Pat scallops dry, season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear scallops 2-3 minutes per side until golden.
  3. Add butter, cook 2-3 minutes until opaque. Remove scallops.
  4. In same skillet, simmer heavy cream, Cajun seasoning, garlic powder, paprika. Stir in lemon juice.
  5. Return scallops to sauce, heat 1 minute. Serve garnished with parsley.

Notes

Ensure scallops are dry before searing for the best crust.
