- Pat scallops dry, season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear scallops 2-3 minutes per side until golden.
- Add butter, cook 2-3 minutes until opaque. Remove scallops.
- In same skillet, simmer heavy cream, Cajun seasoning, garlic powder, paprika. Stir in lemon juice.
- Return scallops to sauce, heat 1 minute. Serve garnished with parsley.

Ensure scallops are dry before searing for the best crust.
