  • 1 pound ground beef
  • 1 cup matchstick carrots
  • 1 red bell pepper, sliced
  • 2-3 scallions rough chopped
  • 3 garlic cloves , minced
  • 1/2 cup low sodium soy sauce
  • 1/2 cup brown sugar
  • 14.5 ounces chicken stock
  • 2 packets ramen noodle packets or ramen sold in Asian markets discard seasoning packets
  • Sesame seeds for garnish, optional
  • Scallions for garnish, optional

Method
 

  1. Gather all of the ingredients.
  2. Brown and drain ground beef.
  3. Add the beef to the slow cooker.
  4. Add carrots, red bell pepper, and scallions to the slow cooker.
  5. Mix garlic, soy sauce, brown sugar, and chicken stock in a bowl.
  6. Pour the sauce into the slow cooker and stir.
  7. Cook on low for 4-6 hours.
  8. Add dry ramen noodles 30 minutes before serving, discard seasoning.
  9. Stir noodles frequently to cook evenly.
  10. Serve when the noodles are tender!
  11. Top with more scallions and sesame seeds.

Notes

Adjust the amount of soy sauce and brown sugar to your taste preference. For a spicier ramen, add a dash of chili garlic sauce or red pepper flakes.
