  • 1 medium green cabbage chopped
  • 1 lb smoked beef sausage sliced into 1/2-inch pieces
  • 1.5 lbs baby potatoes halved
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • to taste Salt and black pepper
  • 0.5 teaspoon red pepper flakes optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. Add the olive oil to the bottom of the slow cooker.
  2. Layer in the chopped cabbage, baby potatoes, sliced beef sausage, and onions.
  3. Sprinkle the garlic, smoked paprika, salt, black pepper, and red pepper flakes over the top.
  4. Pour the chicken broth evenly over all the ingredients.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes and cabbage are tender.
  6. Stir gently before serving and garnish with chopped parsley.

Notes

For a vegetarian option, omit the sausage and add a can of drained and rinsed cannellini beans.
