  • 2 pounds boneless, skinless chicken thighs or breasts
Vegetables
  • 3 diced carrots
  • 3 diced celery stalks
  • 1 diced onion
  • 4 peeled and cubed potatoes
Garlic
  • 4 cloves minced garlic
Broth & Paste
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves bay leaves
Seasonings
  • to taste Salt and Pepper
  • 1/4 cup flour for thickening (optional)
Garnish
  • Chopped fresh parsley for garnish

Method
 

  1. Step 1: Sear the chicken in a hot skillet until golden brown.
  2. Step 2: Place chicken, vegetables, potatoes, garlic, and bay leaves into the slow cooker.
  3. Step 3: Add thyme, salt, and pepper; stir to combine.
  4. Step 4: Pour in chicken broth, add flour if desired, and stir.
  5. Step 5: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Step 6: Serve hot, garnished with parsley.

Notes

For a thicker stew, add flour during cooking and stir well.
