Method
- Brown ground beef; drain grease.
- Combine beef, onion, pepper, beans, corn, tomatoes, taco seasoning, and soup in slow cooker.
- Stir well.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in cheese during the last 30 minutes.
- Spoon cornbread batter over casserole.
- Cook until cornbread is set, about 20-30 minutes.
- Serve hot.
Notes
For a spicier casserole, use hot taco seasoning or add a pinch of cayenne pepper.
