  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 15 ounce kidney beans, drained and rinsed
  • 15 ounce pinto beans, drained and rinsed
  • 15 ounce corn, drained
  • 10 ounce diced tomatoes and green chilies (Rotel), undrained
  • 1 ounce package taco seasoning
  • 10.75 ounce condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 8 ounce package cornbread mix, prepared according to package directions

Method
 

  1. Brown ground beef; drain grease.
  2. Combine beef, onion, pepper, beans, corn, tomatoes, taco seasoning, and soup in slow cooker.
  3. Stir well.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Stir in cheese during the last 30 minutes.
  6. Spoon cornbread batter over casserole.
  7. Cook until cornbread is set, about 20-30 minutes.
  8. Serve hot.

Notes

For a spicier casserole, use hot taco seasoning or add a pinch of cayenne pepper.
