  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves fresh garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch for thickening
  • 2 tablespoons cold water for cornstarch slurry
  • 3 medium carrots, chopped
  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced
  • 2 green onions, freshly chopped
  • 1 tablespoon toasted sesame seeds

Method
 

  1. Whisk honey, soy sauce, garlic, and chicken broth.
  2. Place chicken in slow cooker, top with carrots, broccoli, and bell pepper.
  3. Drizzle honey garlic sauce over chicken and vegetables.
  4. Cook on low for 4-6 hours, until chicken is tender.
  5. Mix cornstarch with water, stir into slow cooker 30 minutes before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the honey garlic sauce.
