  • 1 lb lean ground beef (80/20)
  • 1 packet taco seasoning or 2 tbsp homemade
  • 15 oz black beans, rinsed
  • 1 cup corn kernels fresh or frozen
  • 14.5 oz diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup chopped bell peppers mix of colors

Method
 

  1. Brown ground beef, drain fat.
  2. Stir in taco seasoning, cook 1 minute.
  3. Transfer beef to slow cooker, add beans, corn, tomatoes, and peppers; mix.
  4. Cook on low for 4 hours or high for 2 hours.
  5. Sprinkle cheese on top, cover until melted.
  6. Serve hot with desired toppings.

Notes

For a spicier casserole, add a can of diced tomatoes with green chilies.
