Method
- Brown ground beef, drain fat.
- Stir in taco seasoning, cook 1 minute.
- Transfer beef to slow cooker, add beans, corn, tomatoes, and peppers; mix.
- Cook on low for 4 hours or high for 2 hours.
- Sprinkle cheese on top, cover until melted.
- Serve hot with desired toppings.
Notes
For a spicier casserole, add a can of diced tomatoes with green chilies.
