Dough
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
Ginger Glaze
  • 1 cup powdered sugar
  • 2 tablespoons ginger syrup (or fresh ginger juice)
  • 1-2 teaspoons water (as needed)

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  2. Mix dry ingredients in a bowl; cream butter and sugars, then add egg, molasses, vanilla.
  3. Combine dry and wet ingredients, scoop dough onto sheet, and bake for 10-12 minutes.
  4. Cool cookies, then whisk powdered sugar, ginger syrup, and water to make glaze. Drizzle over cookies.
