Sugar Cookie Fruit Pizza

Ingredients
  

Cookie Crust
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 3/4 cups all-purpose flour
Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 2 cups powdered sugar
Fruit Toppings
  • 1/2 cup diced strawberries, washed and dried
  • 1/2 cup blueberries, washed and dried
  • 1/2 cup blackberries, washed and dried
  • 1/2 cup raspberries, washed and dried
  • 1/4 cup chopped kiwi (approx. 1–2 kiwis)
  • 8 ounces mandarin oranges, drained and patted dry

Method
 

  1. Preheat oven to 350°F (177°C).
  2. Beat butter and sugar until light and fluffy. Add vanilla and egg, beat 30 seconds.
  3. Add salt, baking powder, and flour. Mix until a dough forms.
  4. Press dough evenly onto a 12" pizza pan.
  5. Bake for 14–16 minutes or until lightly browned. Cool completely.
  6. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beat until combined.
  7. Spread cream cheese frosting over cooled cookie crust.
  8. Top with fruit and refrigerate until ready to serve.

Notes

For a softer crust, bake for the shorter time. For a crispier crust, bake for the longer time.
