Method
- Preheat oven to 350°F (177°C).
- Beat butter and sugar until light and fluffy. Add vanilla and egg, beat 30 seconds.
- Add salt, baking powder, and flour. Mix until a dough forms.
- Press dough evenly onto a 12" pizza pan.
- Bake for 14–16 minutes or until lightly browned. Cool completely.
- Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beat until combined.
- Spread cream cheese frosting over cooled cookie crust.
- Top with fruit and refrigerate until ready to serve.
Notes
For a softer crust, bake for the shorter time. For a crispier crust, bake for the longer time.
