Ingredients
  

Crust
  • 16.5 ounce refrigerated sugar cookie dough roll
Cream Cheese Layer
  • 8 ounces cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
Topping
  • Assorted fresh fruit such as strawberries, blueberries, kiwi, mandarin oranges, raspberries, etc.
  • 1/4 cup apricot jam or apple jelly warmed (optional, for glaze)

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Press sugar cookie dough into the bottom of a 9x13 inch baking pan.
  3. Bake for 15-20 minutes, or until lightly golden brown. Let cool completely.
  4. In a medium bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread cream cheese mixture evenly over the cooled sugar cookie crust.
  6. Arrange assorted fruit on top of the cream cheese layer.
  7. If desired, brush warmed apricot jam or apple jelly over the fruit for a glaze.
  8. Cut into bars and serve immediately or chill until ready to serve.
