Method
- Preheat oven to 350 degrees F (175 degrees C).
- Press sugar cookie dough into the bottom of a 9x13 inch baking pan.
- Bake for 15-20 minutes, or until lightly golden brown. Let cool completely.
- In a medium bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Spread cream cheese mixture evenly over the cooled sugar cookie crust.
- Arrange assorted fruit on top of the cream cheese layer.
- If desired, brush warmed apricot jam or apple jelly over the fruit for a glaze.
- Cut into bars and serve immediately or chill until ready to serve.
