  • 1 cup pineapple chunks
  • 0.5 cup soy sauce
  • 0.25 cup brown sugar
  • 0.25 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 0.25 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Method
 

  1. Place chicken breasts in the crockpot.
  2. Add pineapple chunks on top.
  3. Whisk together soy sauce, brown sugar, vinegar, garlic, ginger, and red pepper flakes.
  4. Pour sauce over chicken and pineapple.
  5. Cook on low for 4-6 hours until chicken is tender.
  6. Shred the chicken using two forks.
  7. Mix cornstarch with water; stir into the sauce and cook on high for 10-15 minutes to thicken.
  8. Return shredded chicken to the crockpot; stir well before serving.
