- Place chicken breasts in the crockpot.
- Add pineapple chunks on top.
- Whisk together soy sauce, brown sugar, vinegar, garlic, ginger, and red pepper flakes.
- Pour sauce over chicken and pineapple.
- Cook on low for 4-6 hours until chicken is tender.
- Shred the chicken using two forks.
- Mix cornstarch with water; stir into the sauce and cook on high for 10-15 minutes to thicken.
- Return shredded chicken to the crockpot; stir well before serving.
