Method
- Place chicken breasts in the slow cooker.
- Mix pineapple juice, brown sugar, soy sauce, pineapple, garlic, ginger, salt, and pepper in a bowl.
- Pour mixture over chicken.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken and set aside.
- Whisk cornstarch and water to make a slurry.
- Pour slurry into slow cooker and stir to thicken sauce.
- Return chicken to slow cooker for 10-15 minutes.
- Shred chicken or leave whole.
- Serve over rice or noodles, garnish if desired.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce.
