Ingredients
  

Main Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 0.5 cup brown sugar
  • 0.33 cup soy sauce
  • 8 oz crushed pineapple in juice, undrained
  • 1 teaspoon minced garlic
  • 0.5 teaspoon ground ginger
  • Salt and pepper to taste
Thickening
  • 2 tablespoons cornstarch
  • 2 tablespoons water
Garnish (Optional)
  • sliced green onions and sesame seeds for garnish

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Mix pineapple juice, brown sugar, soy sauce, pineapple, garlic, ginger, salt, and pepper in a bowl.
  3. Pour mixture over chicken.
  4. Cook on low for 6-7 hours or high for 3-4 hours.
  5. Remove chicken and set aside.
  6. Whisk cornstarch and water to make a slurry.
  7. Pour slurry into slow cooker and stir to thicken sauce.
  8. Return chicken to slow cooker for 10-15 minutes.
  9. Shred chicken or leave whole.
  10. Serve over rice or noodles, garnish if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes to the sauce.
