  • 3-4 lb boneless turkey breast

  • 1 tablespoon olive oil
  • 2 cups fresh cranberries
  • 1 cup orange juice
  • 1/2 cup sugar
  • 1 teaspoon grated orange zest
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Method
 

  1. Preheat oven to 350°F (175°C). Season turkey and rub with olive oil.
  2. Roast turkey for 1.5-2 hours until internal temp reaches 165°F (75°C).
  3. Meanwhile, combine cranberries, orange juice, sugar, orange zest, cinnamon, and nutmeg in a saucepan.
  4. Bring to a boil, then simmer 10-15 minutes until thickened and cranberries burst.
  5. Let turkey rest 10 minutes, then slice and serve with sauce.
