  • 3 ripe bananas ripe bananas mashed
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 eggs large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda baking soda
  • 1/2 teaspoon salt salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mash bananas and mix with sugar, oil, and eggs until well combined.
  3. In another bowl, whisk together flour, baking soda, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Divide batter evenly into muffin cups and bake for 20 minutes or until a toothpick comes out clean.
