Ingredients
  

Main
  • 2 cups rice
  • 1 tablespoon olive oil
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 1 unit bell pepper, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 cups vegetable broth
  • 1 teaspoon soy sauce
  • to taste Salt and pepper
  • optional Fresh herbs for garnish

Method
 

  1. Rinse rice until water runs clear.
  2. Heat olive oil and sauté onion and garlic until translucent.
  3. Add bell pepper and mixed vegetables; cook 5 minutes.
  4. Stir in rice, then add broth and soy sauce; season with salt and pepper.
  5. Bring to boil, simmer covered 15-20 minutes, then let sit 5 minutes. Fluff and garnish.

Notes

Feel free to add fresh herbs for extra flavor.
