Method
- Rinse rice until water runs clear.
- Heat olive oil and sauté onion and garlic until translucent.
- Add bell pepper and mixed vegetables; cook 5 minutes.
- Stir in rice, then add broth and soy sauce; season with salt and pepper.
- Bring to boil, simmer covered 15-20 minutes, then let sit 5 minutes. Fluff and garnish.
