  • 1 slice round slice of watermelon at least 1-inch thick
  • 1/3 cup Greek yogurt
  • 0.5 tablespoon honey
  • 1/3 cup fresh fruit berries, kiwi, pineapple, pomegranate seeds, etc
  • fresh mint leaves, granola, or toasted nuts optional - additional toppings

Method
 

  1. Cut a mini watermelon to make a plate-like round slice about 1 to 1 1/2 inches thick.
  2. Cut the watermelon into 4 or 6 ‘pizza slices’.
  3. Spoon the yogurt onto the slices and spread it out flat.
  4. Top the yogurt with a drizzle of honey and your favorite fruits.

Notes

For best results, use chilled watermelon and serve immediately to prevent the pizza from becoming soggy.
