Ingredients
  

Protein
  • 1.5 pounds ground chicken (98% fat-free)
  • 1 packet Mrs. Dash low sodium taco seasoning
  • 1 15 oz can black beans
  • 1 15 oz can corn
  • 4 pieces roma tomatoes chopped
  • 1 bunch scallions chopped
  • 6 tablespoons Fat Free Salsa or Pico De Gallo
  • 12 tablespoons Fat Free Cheddar Cheese
  • 1 cup cooked rice see notes above
  • 6 dollops Greek Yogurt optional

Method
 

  1. Cook the ground chicken in a skillet until browned. Add seasoning and water, simmer for 3-5 minutes.
  2. Prepare all ingredients: open beans and corn, dice tomatoes and scallions.
  3. Cook rice in boiling water until absorbed, about 10 minutes.
  4. Assemble bowls: add rice, then top with chicken, beans, corn, tomatoes, scallions, salsa, cheese, and yogurt.
