Ingredients
  

Protein
  • 1 pound boneless chicken breasts
  • 1 jar salsa
  • 1.5 cups black beans, rinsed and drained
  • 1.5 cups frozen corn
  • 1 cup water
  • 0.5 cup Shredded Mexican cheese (optional) optional
  • 1 cup tomatoes, chopped (optional) optional

Method
 

  1. Add water and chicken to Instant Pot. Cook on poultry for 18 minutes, then natural release for 5 minutes. Shred chicken.
  2. Add remaining ingredients. Cook on high for 2 minutes, then natural release for 5 minutes.
  3. Stir well, serve topped with cheese and tomatoes if desired.

Notes

Feel free to add fresh cilantro or lime for extra flavor.
