Method
- Heat olive oil in a large pot over medium-high heat. Cook onions for 4 minutes until softened, then add garlic and cook 30 seconds.
- Add broth, beans, chiles, chicken, corn, and spices. Bring to a boil, then simmer for 10 minutes.
- Mix hot chili with sour cream in a small bowl, then stir into the chili. Serve hot.
Notes
For a creamier texture, blend some of the beans before adding.
