Ingredients
  

Main
  • 1 pound italian sausage, casings removed
  • 1 diced onion
  • 2 diced celery stalks
  • 3 minced garlic cloves
  • 8 cups cubed bread (preferably day-old)
  • 1/2 cup chicken broth
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 large eggs, beaten

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook sausage until browned; set aside.
  3. Sauté onion, celery, and garlic until softened.
  4. Mix bread, sausage, vegetables, broth, butter, herbs, salt, pepper, parsley, and eggs.
  5. Transfer to a greased dish, cover, and bake 30 minutes. Uncover and bake 15-20 minutes until golden.

Notes

For extra flavor, add a splash of white wine or a handful of dried cranberries before baking.
