Ruby Tuesday White Chicken Chili

Ingredients
  

Broth and Beans
  • 6 cups chicken stock
  • 1 pound great northern bean soaked overnight
  • 3-4 cans great northern beans alternative to soaked beans
Vegetables and Chicken
  • 2 medium onions chopped
  • 6 cups diced cooked chicken
  • 2 jalapeno peppers jalapeno peppers seeded and diced
  • 1 1/2 teaspoons oregano
  • 2 teaspoons cumin
  • 1/4 teaspoon cayenne pepper
  • 2 garlic cloves garlic cloves minced
  • 1 cup salsa
  • 1 tablespoon vegetable oil
  • 1 pinch to taste salt

Method
 

  1. Simmer beans, half the onions, and half the garlic in chicken stock for 2 hours until beans soften.
  2. Add cooked chicken and salsa to the pot.
  3. Seed and dice jalapenos.
  4. Sauté peppers, spices, remaining onions and garlic in oil, then add to the pot and simmer for 1 hour.
  5. Garnish with sour cream, cheese, and cilantro before serving.

Notes

For a spicier chili, add more cayenne or jalapenos.
